A washed Yirgacheffe from the Gedeo Zone: jasmine on the nose, bergamot through the middle, white peach as it cools. Light roast, 250 g bag, seasonal — when this lot runs out we do not backfill it with something similar.
This is the most delicate coffee we sell and the one most sensitive to how you brew it. Grind too coarse and it is tea; grind too fine and the florals turn soapy. The 250 g bag size is deliberate — at this price we would rather you finish it fresh.
It is a light roast, and light roasts want hotter water and a finer grind than people expect. Start at 96 °C and a grind one step finer than your usual pour-over setting.
