A medium-dark espresso roast that does not disappear into a latte. Dark chocolate and molasses with a black-cherry edge, pulled best as a 1:2 ratio in about 28 seconds.
Forte is the only coffee we roast specifically for pressure. The Brazilian base gives it the sugar and body a shot needs; the wet-hulled Sumatran component is what keeps it present through 150 ml of steamed milk instead of turning into a beige suggestion.
It rests better than most espresso. Give it four days off the roast date before you dial in — pulled too fresh, it gasses and channels, and you will chase the grinder for nothing.
