Lowlands is the house blend: a medium roast built to be forgiving. It tastes like coffee should at 6:40 in the morning — chocolate, almond, a clean apple finish — and it does not fall apart if your water is a little too hot or your grind a little too coarse.
We built Lowlands for the brew that happens on autopilot. Three origins, blended after roasting rather than before, so each component hits the roast profile it actually wants. The Brazilian brings the body, Colombia the sweetness, and a small share of Guatemalan washed coffee keeps the finish bright instead of flat.
It is the most forgiving coffee we make. A 30-second swing in brew time moves the cup, but it does not break it — which is why it is what we hand to someone setting up their first pour-over, and what we keep on the batch brewer at the cafe all day.
